DIY Turmeric Popcorn: Cheesy & Vegan

 

If you’ve ever tried BOOMCHICKAPOP’s Cheddar Cheese Popcorn, then you already know what heaven tastes like.  If you haven’t tried BCP’s popcorn then you’re in for a DIY treat.

Today I attempted to make “heaven” in my kitchen this afternoon. After some trial and error I made this salty, garlicky, faux-cheddar treat finally taste great (and the best part is) it’s also good for your gut.

Ingredients

  • 4 tbsp organic nutritional yeast

  • 1/2 tsp organic turmeric powder

  • ¼ tsp organic paprika powder

  • ¼ tsp organic garlic powder

  • ½  tsp organic onion powder

  • ¼ tsp organic powdered ginger

  • sea salt to taste

  • 2 tbsp organic coconut oil

  • 1/2 cup organic corn kernels

Instructions: Makes about 5 cups of popcorn

  1. Grab a large pot and a lid, heat 2 tablespoon coconut oil over medium heat until the coconut oil melts. Then add one kernel. Place the lid back on the pot.

  2. Wait for the single kernel to pop. Then add the rest of the kernels all at once. Replace the lid. Shake it up baby! Literally, shake the pan until your kernels are coated. Occasionally remove the pot off the heat so it’s not constantly on the stove.

  3. When you hear your kernels start to pop, gently crack the lid open a tiny, tiny bit to let excess steam to escape.

  4. Turn off the stove off once you hear the popping start to slow down. Wait 20 seconds or so before removing the lid and add your seasonings. Mix well with a spoon until the popcorn is well-coated in turmeric-colored goodness.

Recipe Tips & Tricks:

  • It’s tempting, but don’t try and pop every last kernel. That type of thinking will just end up in burned popcorn.  

  • Turmeric has a tendency to stain, so leave it out of the recipe if you are weary about tiny hands and the bright orange powder.

Why nutritional yeast? Nutritional yeast is inactive (so it won't make bread rise or cause a yeast overgrowth in your body) and it happens to be a perfect replacement for cheese flavoring. It’s a complete protein and full of fiber making it great for gut health.

Why Tumeric? Turmeric contains curcumin, which has powerful antioxidant and anti-inflammatory benefits. It also helps make this faux-cheesy recipe look cheddar-coated.
